I have so many things to do everyday, I wish I have 48 hours per day, (well, I didn't talk about work, haha, I'm busy with my leisure than work). I try to think about what to do but still can't find the answer, esp. after I bought too many cookbooks, concert DVD, and manga.
Start with cookbooks, last month I got about 20 new cookbooks so I had to spend my time reading and imagine (or daydream ^^") about what I to make, and bury myself in the kitchen all day the next day to crate whatever I found interesting. Next in the night it's time for concert, manga and yes anime.
With this kind of lifestyle I'm a bit tried, I need quick energy booster. And yes, chocolate is what I turn too. If I don't have any sweet treat that made from chocolate I always eat 70% dark chocolate instead. But it's boring to eat that way, turning the delicious chocolate into something else is a good idea.
This time to fit my life (quick and busy style), easy to make chocolate cookie is the best choice. This chocolate cookie is so rich, it's a brownie in a form of cookie. With 70% dark chocolate the chocolate taste is so important, again be sure to choose the one that you love to eat ^^. You can change white chocolate into dark chocolate chunk too if you want.
Brownie cookies
Makes 8
1................................... Egg
65g ............................... Granulated sugar
1tsp .............................. Coffee extract
10g ............................... Unsalted butter
100g ............................. Dark chocolate (70%), chopped
20g ............................... All purpose flour
1/8tsp ........................... Baking powder
...................................... Pinch of salt
35g ............................... Walnut, chopped
25g ............................... White chocolate chopped if large
Preheat the oven to 180C
Line baking sheet with baking paper.
Put the chocolate and butter into a microwavable bowl, heat in a microwave for 1.30 to 2 minutes (low power) until melt, stir until fully melt, set aside.
Put the egg and sugar into a bowl, beat with hand mixer until thick and light in color.
Pour the melted chocolate mixture into the bowl, beat to combine.
Sift the flour, salt and baking powder into a bowl with white chocolate and walnut.
Fold to combine.
Spoon the dough (about 1 round table spoon) onto the prepared baking sheet, press lightly.
Bake for 10 minutes, until risen but still soft in the center.
Let the cookies cool and harden on the baking sheet.
